    Double Edge Fillet Knife Breakdown

    Who's this knife for?

The double edge blade profile gives you two working edges on a single knife, a traditional fillet edge on one side and a finer edge on the other for detail work around rib cages, pin bones, and skin removal. Whether you're cleaning walleye on the shore of a Great Lakes tributary, filleting perch at the cleaning station, or breaking down salmon at camp, the dual edge design means less switching between knives and more time on the water. If you fillet in volume or want cleaner cuts with less waste, this is the blade that delivers.

    Blade specs and steel

X50CrMoV15 stainless steel, hardened to 55-57 HRC. The go-to steel for fillet knives because of its corrosion resistance in wet, saltwater, and freshwater environments. The blade won't rust or pit from repeated exposure to fish, blood, and moisture. Blade length is 7 1/4 inches with an overall knife length of 12 1/4 inches. Blade thickness is .100 inches, giving you the flex needed to follow the backbone and contour of the fish without cutting through bone. Full tang construction for control and balance during long filleting sessions.

    Handle material and grip

Available in multiple handle options ranging from wood & G10. Each handle is hand-fitted and contoured for a secure grip during wet, slippery fish processing. Handle length is 5 inches, providing enough length for a full grip with room to choke up for detail cuts near the head and tail. The extended handle accommodates both standard and overhand filleting grips. Hand assembled in Rapid River, Michigan.

    What's in the box?

Double edge fillet knife, fitted sheath, and care instructions. Custom laser engraving is available for logos or personalized text.

    Care and maintenance

RRK knives are built for hard use in the field, shop, kitchen, and everyday carry. To keep your knife performing at its best, proper care and routine maintenance are recommended.

After each use, hand wash the knife with soap and warm water, then dry it completely. Do NOT place your knife in the dishwasher. Apply a light coat of food-safe mineral oil or knife-specific blade oil after cleaning to help protect the blade and maintain the finish, especially for knives used in the kitchen or around moisture and acidic foods.

Avoid prolonged exposure to moisture, saltwater, blood, or acidic materials, and never leave the knife stored wet or dirty. For long-term storage, keep the knife in a cool, dry location and avoid storing it inside a leather sheath for extended periods.

To maintain the edge, use a leather strop or carbide sharpener between full sharpenings. Avoid power grinders or excessive heat during sharpening, as overheating can damage the blade’s heat treatment and edge retention.

Rapid River Knifeworks offers free sharpening and polishing for the life of every RRK knife. Simply ship the knife in and the team will restore the factory edge and finish. Customer is responsible for return shipping.
