    Who's this knife for?

    The paring knife is the one blade every kitchen needs but nobody thinks about until they're fighting a chef knife to peel an apple. Built for the detail work that bigger knives can't do. Peeling, trimming, deveining, mincing garlic, coring fruits, slicing small vegetables, or cleaning up a cut of wild game before it hits the pan. If you process your own venison, elk, or waterfowl and do the cooking yourself, this is the knife that handles the small precision cuts between the butcher block and the plate. Pairs with the Large Chef, Small Chef, and Santoku to round out a full handcrafted kitchen set.

    Blade specs and steel

    X50CrMoV15 stainless steel, hardened to 55-57 HRC. X50CrMoV15 is a high-chromium German steel that resists corrosion from acidic fruits, vegetables, and constant hand washing. Blade length is 2 2/8 inches with an overall knife length of 6 inches. Blade thickness is thin enough for precise, controlled cuts on small ingredients without crushing or tearing. Full tang construction for balance in a small blade.

    Handle material and grip

    The paring knife comes in Corian® handle options, which is food safe and a durable handle material. Available in multiple handle options. Handle length is 3 3/4 inches, proportioned to give you a full comfortable grip on a compact knife. Each handle is hand-fitted and shaped for a pinch grip or full wrap depending on the task. Sized so the knife feels like an extension of your hand during close, detailed kitchen work. Hand assembled in Rapid River, Michigan.

    Care and maintenance

    RRK knives are built for hard use in the field, shop, kitchen, and everyday carry. To keep your knife performing at its best, proper care and routine maintenance are recommended.

    After each use, hand wash the knife with soap and warm water, then dry it completely. Do NOT place your knife in the dishwasher. Apply a light coat of food-safe mineral oil or knife-specific blade oil after cleaning to help protect the blade and maintain the finish, especially for knives used in the kitchen or around moisture and acidic foods.

    Avoid prolonged exposure to moisture, saltwater, blood, or acidic materials, and never leave the knife stored wet or dirty. For long-term storage, keep the knife in a cool, dry location and avoid storing it inside a leather sheath for extended periods.

    To maintain the edge, use a leather strop or carbide sharpener between full sharpenings. Avoid power grinders or excessive heat during sharpening, as overheating can damage the blade’s heat treatment and edge retention.

    Rapid River Knifeworks offers free sharpening and polishing for the life of every RRK knife. Simply ship the knife in and the team will restore the factory edge and finish. Customer is responsible for return shipping.

    Shipping and delivery

    Orders are typically processed and shipped within 3–4 business days. Due to the handcrafted nature of RRK knives, custom laser engraving requests, and seasonal order volume, processing times may vary.

    Once your order ships, you will receive a shipping confirmation email with tracking information. Shipping protection is available for purchase at checkout for added protection against lost or damaged packages during transit.

    There is also an option at checkout to pick up your order in-store at no charge if you plan to be in the area. Once your order is ready, the RRK team will contact you so your knife is ready and waiting when you arrive.
