    Who's this knife for?

    The Santoku is the kitchen workhorse for the cook who wants one blade that slices, dices, and minces without switching knives. Originally a Japanese-style design meaning "three virtues," the Santoku excels at three tasks: cutting meat, chopping vegetables, and mincing herbs. The flatter blade profile compared to a traditional chef knife gives you more contact with the cutting board on each stroke, making it faster and more efficient for high-volume prep work. If you're slicing backstrap into medallions, dicing onions for a cast iron skillet, or mincing garlic for a wild game marinade, the Santoku gets through it with less wrist fatigue and more precision. For the outdoorsman who takes the kitchen as seriously as the hunt, this blade bridges the gap between field to fork.

    Blade specs and steel

    X50CrMoV15 stainless steel, hardened to 55-57 HRC. X50CrMoV15 is a high-chromium German steel built for the demands of daily kitchen use, offering corrosion resistance and edge retention that holds up through long prep sessions. Overall length is 10 5/8 inches with a 6 1/2 inch blade. Handle length is 4 1/8 inches. The wide blade profile doubles as a scoop for transferring chopped ingredients from board to pan. Full tang construction for balance and control.

    Handle material and grip

    Corian® handle options, which is food safe and a durable handle material. Available in multiple handle options. Each handle is hand-fitted and shaped for a comfortable pinch grip, which is the natural hold for the rocking and push-cutting motions the Santoku is designed for. Balanced to keep the weight centered over the cutting board for less fatigue during long prep sessions. Hand assembled in Rapid River, Michigan.

    Care and maintenance

    RRK knives are built for hard use in the field, shop, kitchen, and everyday carry. To keep your knife performing at its best, proper care and routine maintenance are recommended.

    After each use, hand wash the knife with soap and warm water, then dry it completely. Do NOT place your knife in the dishwasher. Apply a light coat of food-safe mineral oil or knife-specific blade oil after cleaning to help protect the blade and maintain the finish, especially for knives used in the kitchen or around moisture and acidic foods.

    Avoid prolonged exposure to moisture, saltwater, blood, or acidic materials, and never leave the knife stored wet or dirty. For long-term storage, keep the knife in a cool, dry location and avoid storing it inside a leather sheath for extended periods.

    To maintain the edge, use a leather strop or carbide sharpener between full sharpenings. Avoid power grinders or excessive heat during sharpening, as overheating can damage the blade’s heat treatment and edge retention.

    Rapid River Knifeworks offers free sharpening and polishing for the life of every RRK knife. Simply ship the knife in and the team will restore the factory edge and finish. Customer is responsible for return shipping.

    Shipping and delivery

    Orders are typically processed and shipped within 3–4 business days. Due to the handcrafted nature of RRK knives, custom laser engraving requests, and seasonal order volume, processing times may vary.

    Once your order ships, you will receive a shipping confirmation email with tracking information. Shipping protection is available for purchase at checkout for added protection against lost or damaged packages during transit.

    There is also an option at checkout to pick up your order in-store at no charge if you plan to be in the area. Once your order is ready, the RRK team will contact you so your knife is ready and waiting when you arrive.
