    Small Chef Knife Breakdown

    Who's this knife for?

The Small Chef is for the cook who reaches for a nimble blade over a bulky one. Not every cut in the kitchen needs an 8 inch chef knife. Trimming silverskin off a backstrap, breaking down a grouse, slicing cherry tomatoes, or portioning a tenderloin for the grill. The Small Chef handles the mid-range kitchen work that's too big for a paring knife and too small to justify pulling out the large chef. It's also the go-to camp kitchen knife when you don't want to pack the full set. One blade, a cutting board, and a cast iron skillet is all you need to turn a day's harvest into a meal. Pairs with the Large Chef, Santoku, and Paring Knife to build out the complete kitchen lineup.

    Blade specs and steel

X50CrMoV15 stainless steel, hardened to 55-57 HRC. X50CrMoV15 is a high-chromium German steel used by top kitchen knife manufacturers worldwide for its balance of edge retention, corrosion resistance, and ease of sharpening. The high chromium content makes it highly resistant to rust and staining from acidic foods, moisture, and daily kitchen use. Blade length is 5 7/8 inches with an overall knife length of 10 3/4 inches. Handle length is 4 7/8 inches. Full tang construction for balance and control through rocking, slicing, and push-cutting motions.

    Handle material and grip

Available in multiple handle options. Corian® handle options, which is food safe and a durable handle material. Each handle is hand-fitted and shaped for a comfortable pinch grip or full wrap. The 4 7/8 inch handle gives you plenty of room to adjust your grip depending on the task without feeling oversized for a mid-range blade. Balanced to keep the knife responsive and light in hand during quick prep work. Hand assembled in Rapid River, Michigan.

    Care and maintenance

RRK knives are built for hard use in the field, shop, kitchen, and everyday carry. To keep your knife performing at its best, proper care and routine maintenance are recommended.

After each use, hand wash the knife with soap and warm water, then dry it completely. Do NOT place your knife in the dishwasher. Apply a light coat of food-safe mineral oil or knife-specific blade oil after cleaning to help protect the blade and maintain the finish, especially for knives used in the kitchen or around moisture and acidic foods.

Avoid prolonged exposure to moisture, saltwater, blood, or acidic materials, and never leave the knife stored wet or dirty. For long-term storage, keep the knife in a cool, dry location and avoid storing it inside a leather sheath for extended periods.

To maintain the edge, use a leather strop or carbide sharpener between full sharpenings. Avoid power grinders or excessive heat during sharpening, as overheating can damage the blade’s heat treatment and edge retention.
