    Cleaver Breakdown

    Who's this knife for?

The Cleaver is for the cook and wild game processor who breaks down whole animals at home. When you're splitting through bone, chopping through ribs, portioning a whole deer shoulder, or breaking down a wild hog, a chef knife isn't built for that kind of impact. The Cleaver is. The wide, heavy blade uses weight and momentum to power through cuts that would damage a thinner knife. It's also the best tool for smashing garlic, crushing peppercorns, and transferring piles of chopped ingredients from board to pan. If you butcher your own wild game and do the cooking yourself, this is the blade that bridges the gap between the butcher block and the dinner table.

    Blade specs and steel

X50CrMoV15 stainless steel, hardened to 55-57 HRC. X50CrMoV15 is a high-chromium German steel that resists corrosion and staining from constant exposure to moisture, blood, bone marrow, and acidic foods. Blade length is 6 inches with an overall knife length of 11 3/8 inches. Blade thickness is .11 inches. The wide blade profile gives you a flat surface for crushing and scooping, and the weight behind it lets the blade do the work on heavy chops without forcing the cut. Full tang construction for balance and durability under repeated heavy impact.

    Handle material and grip

The cleaver comes in Corian® handle options, which is food safe and a durable handle material. Handle length is 5 3/8 inches, providing a full secure grip with room to choke up or slide back depending on whether you're making precision cuts or heavy chops. Each handle is hand-fitted and shaped to absorb impact comfortably during repetitive chopping tasks. Hand assembled in Rapid River, Michigan.

    Care and maintenance

RRK knives are built for hard use in the field, shop, kitchen, and everyday carry. To keep your knife performing at its best, proper care and routine maintenance are recommended.

After each use, hand wash the knife with soap and warm water, then dry it completely. Do NOT place your knife in the dishwasher. Apply a light coat of food-safe mineral oil or knife-specific blade oil after cleaning to help protect the blade and maintain the finish, especially for knives used in the kitchen or around moisture and acidic foods.

Avoid prolonged exposure to moisture, saltwater, blood, or acidic materials, and never leave the knife stored wet or dirty. For long-term storage, keep the knife in a cool, dry location and avoid storing it inside a leather sheath for extended periods.

To maintain the edge, use a leather strop or carbide sharpener between full sharpenings. Avoid power grinders or excessive heat during sharpening, as overheating can damage the blade’s heat treatment and edge retention.

Rapid River Knifeworks offers free sharpening and polishing for the life of every RRK knife. Simply ship the knife in and the team will restore the factory edge and finish. Customer is responsible for return shipping.
